This hands-on workshop introduces the gaiwan as a practical brewing vessel rather than a piece of ceremonial choreography. Participants prepare and taste tea, learn safe handling and explore how leaf, water, temperature, time and proportion change the cup.

Historical context
Gaiwan means “lidded bowl”. Its lid, bowl and saucer can be used together to steep tea, hold back the leaves and pour into smaller cups, or to drink directly. Covered tea bowls are well documented in Qing-dynasty collections; the Hong Kong Museum of Art notes their introduction during the Kangxi period, while surviving examples show how the form combined heat retention with practical control of the leaves.
There is no single universal Chinese tea ceremony. The gaiwan belongs to a broad family of regional and household tea practices, and today it is valued as a precise, flexible tool for exploring loose-leaf tea.
What happens in the workshop
Participants learn how to warm and hold the vessel safely, judge a suitable leaf quantity, choose an appropriate water temperature, time short infusions and decant evenly. Tasting the same leaves across several infusions makes it possible to observe how aroma, body and flavour change with small adjustments.
How the practice may help
A repeatable brewing method can build confidence, sensory vocabulary and attention to cause and effect.
