Nine Steamings, Nine Sunnings: Preparing Huangjing九蒸九晒:黄精古法炮制
Nine rounds of steaming, nine rounds of sun-drying—an old method for preparing huangjing (Solomon's seal rhizome), still practised by hand at Wudang Mountain.
Fresh huangjing rhizomes are pale and firm when dug from the ground. Prepared the traditional way, they are steamed in wooden vats over a wood fire, then laid out to dry in the sun, and the cycle repeats nine times in all. With each round the rhizomes darken, from pale gold to a deep, glossy black.
A slow craft
The wood fire is tended by hand, with logs fed into the furnace beneath a row of steaming vats. The work takes days, not hours. There is no shortcut to the nine steamings and nine sunnings.
Between rounds, the rhizomes are spread out on flat trays in the open air. Sun, wind and time do their part. They are turned, checked and returned to the steamer when ready. The nine-panel image above shows the change round by round: each stage a little darker, a little more translucent, until the colour is almost black.
Why nine
Huangjing, 黄精 (huángjīng), is the rhizome of Solomon's seal (Polygonatum). It has a long history in Chinese herbal tradition and a particular place in Daoist culture, where old texts mention it among the foods associated with mountain hermits. The method 九蒸九晒 (jiǔ zhēng jiǔ shài), "nine steamings, nine sunnings", is one of the best-known traditional ways of preparing it.
In Chinese, nine is the largest single-digit number and is often used to mean "complete" or "as many times as it takes". The number is also a way of describing patience: a process that cannot be hurried and can only be finished by following it through, one round after another.
An everyday moment
On the mountain, work like this goes on quietly alongside study and practice: a fire to tend, trays to turn, weather to watch. It is craft passed on by doing, and a reminder that some things are made well only when they are made slowly.
This is a record of the process itself, not medical or dietary advice.
